Long and slender red rice from South India. Red rice is similar to brown rice and is healthier than regular white rice. Red rice is traditionally double cooked. First, wash the rice and soak a minimum of 4 hours or overnight. Then drain and and simmer with 4 to 8 parts water for 30 min. Cover and and leave for 15-20 minutes. Add salt per taste and boil for another 15-20 min or until cooked. It is finally drained and left covered for a further 10-15 minutes before serving.
