This is whole urad (sabat urad). These lentils have a pungent and robust aroma and rich flavor. Dal makhani is prepared with whole urad and black eye peas. Whole urad is popular all over India. In the North, they are mixed wih red kidney beans to make dals. In the South, they are ground and mixed with flours to make breads, dosa (crepes), idlis (steamed cakes) and sweets. No soaking is required.
