These large, wrinkled, dried red chili peppers are used to add a piquant flavor to dishes. Bydagi chili is well known in the state of Karnataka and has a medium hotness. The spiciness can be altered by removing some of the seeds. Red chilies, whole or crushed, are used in dals, curries and soups.
