Idli rava is a type of coarsely ground rice used in South Indian cuisine to make idlis a traditional savory steamed cake. Idli rava is made from parboiled rice where the rice grains are soaked dried and then coarsely ground. It has a slightly granular texture compared to the finer texture of rice flour.
Idli rava is a key ingredient in preparing idlis. It's soaked mixed with urad dal (black lentils) fermented and then steamed to create the soft and fluffy idlis that are a popular breakfast or snack in South India.
